Is there a way of making email secure?

I have a secure website that allows me to have forms that supposedly  
can't be read by anyone other than the addressee designated in the  
form.  I admit I've mostly closed my eyes and taken it on faith that  
this is the case.  I've never understood the intricacies involved that  
actually make it secure.

I would love however to have an email address that has that same  
function.  Every now and again, someone sends me their credit card  
number in an email.  I certainly don't ask for them to do it, but I'd  
feel awful if it was intercepted and stolen.  Is there some way of  
making sure that an email can't be hijacked?
